Soup is not only easy to make, but also a simple way to get to your daily quantity of vegetables. A portion of homemade soup quickly contains 150 grams of vegetables, more than half the recommended amount, and is packed full of fibre, vitamins and minerals.
Although some of the vitamins are lost when you cook soup, other substances - such as antioxidants - are more effective when you cook it. For example, tomatoes contain lycopene and carrots contain beta-carotene. Cooking makes it easier for the body to absorb the antioxidants from fruit and vegetables. This creates a nice side effect: the possible protective effect of both substances against cancer and cardiovascular diseases is greater when the vegetables are used in soup than when they are eaten raw.
Soup is not only good for ingesting vegetables, eating soup also helps to maintain your moisture balance.
